Signature dishes to try

Eromba

Mashed boiled vegetables — often potatoes, chillies and greens — mixed with fermented fish and herbs. It's the soul of a Manipuri meal: pungent, warming and served with rice.

Singju

A fresh salad of shredded vegetables, herbs and sometimes roasted chickpeas, dressed with a tangy, spicy seasoning. A great introduction for newcomers.

Chamthong / Kangsoi

A light, comforting vegetable stew with herbs and a hint of fermented fish — the kind of dish that's easy to love.

Bamboo shoot preparations

Fresh or fermented bamboo shoots appear throughout the cuisine — in stews, with fish, and as pickles. They're tangy, earthy and unmistakably local.

Chak-hao kheer

Black rice cooked into a rich, deep-purple pudding with coconut and nuts. It's the dessert you'll remember — and a great souvenir to take home.
